To make this recipe, omit the Parmesan and leave as is or season with nutritional yeast flakes for added depth. No matter what you choose, I hope you enjoy!



Basic Herbed Potato Roast
INGREDIENTS:

1 large red onion, diced

2 lbs. baby potatoes, halved or quartered

1/4 cup extra virgin olive oil

3-4 sprigs rosemary, stems removed

2-3 tsp sea salt (even better with seasoned salt like truffle salt or herbs de Provence)

1 tsp cracked black pepper
-
1/2 cup grated Parmigiano-Reggiano cheese
DIRECTIONS:

Preheat oven to 425°F.

Afterwards, in a baking dish or sheet, toss all ingredients together until evenly distributed.

Cover with foil, then transfer to the oven to bake for 45-60 minutes or until fork tender, mixing halfway through. (You will begin to smell the aromas as it bakes, indicating when it is inching closer to eating- Yum!)

When ready, remove from oven and finish with extra cheese, more freshly cracked black pepper and fresh herbs.
