BASIC HERBED POTATO ROAST

I feel everyone should have a basic potato roast recipe on hand. This is mine. No frills or thrills, just reliable and delicious, with the help of a few simple ingredients.

I feel everyone should have a basic potato roast recipe on hand. This is mine. No frills or thrills, just reliable and simply delicious, with the help of a few ingredients.

To make this recipe, omit the Parmesan and leave as is or season with nutritional yeast flakes for added depth. No matter what you choose, I hope you enjoy!

Basic Herbed Potato Roast

INGREDIENTS:

  • 1 large red onion, diced

  • 2 lbs. baby potatoes, halved or quartered

  • 1/4 cup extra virgin olive oil

  • 3-4 sprigs rosemary, stems removed

  • 2-3 tsp sea salt (even better with seasoned salt like truffle salt or herbs de Provence)

  • 1 tsp cracked black pepper

  • 1/2 cup grated Parmigiano-Reggiano cheese

DIRECTIONS:

  1. Preheat oven to 425°F.

  2. Afterwards, in a baking dish or sheet, toss all ingredients together until evenly distributed.

  3. Cover with foil, then transfer to the oven to bake for 45-60 minutes or until fork tender, mixing halfway through. (You will begin to smell the aromas as it bakes, indicating when it is inching closer to eating- Yum!)

  4. When ready, remove from oven and finish with extra cheese, more freshly cracked black pepper and fresh herbs.

  5. (Optional) garnish with Microgreens and enjoy!
