WATERMELON FETA SALAD

Watermelon Feta Salad:

Vinaigrette:

  • 1.5 Tbs raw honey

  • 1.5 tbs balsamic (or red wine vinegar)

  • 3 tbs extra virgin olive oil

  • 1/2 tsp sea salt

  1. In a small jar, add all ingredients together and shake until well combined.

  2. Set aside in the meantime preparing the salad.

Salad:

  • 1 small watermelon, cubed into small pieces (about 4 cups, cubed into 1/2” pieces, I like to prep this first and strain in a colander while I cut up the remaining ingredients)

  • 1 red onion, diced or sliced into thin pieces

  • 2 cups cucumber, diced or thinly sliced

  • 3 tbs mint leaves, thinly sliced

  • 3 tbs basil leaves, thinly sliced

  • 1/2 cup feta, crumbled

  • (optional) sorrel leaves (I recently got a plant so I’m adding for extra color and visual interest.)

  1. Add all ingredients together into a large mixing bowl.

  2. Afterwards, pour the dressing on top and gently toss until well combined.

  3. Transfer to a serving dish and enjoy!

NOTE: Keep in mind salt draws out moisture, so this salad is best served immediately before the watermelon juices take over. Also, you can prepare the produce ahead of time as long as you leave the watermelon separate from the other ingredients, as not to get everything wet and soggy.
