I wish I had a deeper meaning with this recipe but it resulted from my attempt at spring rolls and my Mom royally roasting me for how bad they looked haha! (Whatever, *I* still like them bahaha!)

In response, I went: Well what if we make them together so I can learn, record and photograph a better version for the both of us? (She teaches classes within her community.)

… It may have taken a few years of convincing but we got there eventually haha!

I even asked, “Do you have any special memories with spring rolls?”

Her response: “Nope. Just wrap whatever is in the fridge!”

… So there you have it!

Easy, fresh, and convenient!

Wrap whatever veggies you have fresh or left over from the week and pair with protein if you please!

It is THAT simple.


Mom’s Spring Rolls:

SPRING ROLLS:

  • Rice paper

  • Rice noodles (vermicelli)

  • Cooked protein (chicken, beef, shrimp)

  • Baby greens mix or lettuce

  • Shredded carrots

  • Herbs (mint, cilantro, scallions)

  • Cucumbers (sliced thinly)

  • Avocado slices

  • Sprouts

  1. Dip rice paper disc individually in a paste of water and soak for 15 seconds (or according to instructions).

  2. Lay the sheet onto a cutting board and add a medley of vegetables at the edge of the section closest like you would a burrito.

  3. Carefully fold over the sides and roll upwards into a bundle.

  4. Repeat with as many as preferred then place onto a serving dish (trying to not keep rolls too close or else they stick together)

  5. Pair with dipping sauces (below) and enjoy!

Clear Garlic Sauce:

  • 1 clove of garlic, minced

  • 1 cup sugar 

  • 1/2 cup apple cider vinegar (milder vinegars work well too!)

  • 1/2 cup fish sauce

  • 1 Tbs chili garlic sauce (optional)

  • 1 cup cold water (add gradually, may not use all)

  1. Stir to dissolve honey with the water. Add the remainder of ingredients and mix until thoroughly combined.

Peanut Dipping Sauce:

  • 1 cup creamy peanut butter 

  • 1/2 cup apple cider vinegar (milder vinegars work well too!)

  • 1/2 cup soy sauce

  • 1 tsp toasted sesame seed oil

  • 1/2-1 cup warm water (add gradually a little at a time to get the right consistency

  1. In a big bowl, whisk the first 4 ingredients together until consistent.

  2. Gradually add water to loosen up the sauce and smooth it out.
