LEMONGRASS GINGER WINGS

These lemongrass ginger wings are a childhood favorite. Whenever my Mom made them they never lasted very long. Flash forward to today and they are still as delicious as I remember it. Try for yourself!

Lemongrass Ginger Wings

INGREDIENTS:

  • 6 lbs. Chicken wings (look for “party wings”)

  • 1/2 cup ginger, skin removed

  • 1/3 cup garlic cloves

  • 1/2 cup oyster sauce

  • 1/4 cup lemongrass, tough outside layers removed, thinly sliced

  • 3 Tbs fish sauce

  • 2 Tbs soy sauce

  • 1 tsp black / white pepper

  • (Optional) 2 small kaffir lime leaves, thinly sliced

METHOD:

  1. Crush garlic and ginger in mortar and pestle (or toss it all in a food processor, whichever you prefer and have time for!)

  2. Marinate for at least 4 hours or (even better) overnight.

  3. When ready preheat the oven to 375°F, transfer the chicken, skin side up, to lined baking sheets (trust me, it is not fun soaking and scrubbing for hours after forgetting this step haha!) and distribute the remaining juices on top.

  4. Place into he oven and bake for an hour (without turning or opening the oven) until golden and crispy.

  5. Remove from oven and serve as is or transfer to a platter and pair with fresh produce and rice!
  6. For added presentation, but absolutely optional, garnish with fresh herbs and Thai chili pepper slices. Enjoy!
