Taco Tuesday may have been yesterday but it’s never too late to take a moment of appreciation…
Because there is so much beauty to be found in the details.
It’s fascinating to see what people notice and why, what they see based off how they feel, how they were raised, what they value, and who they value, etc.
For me, what makes my heart sing about this image is the overall movement, the four people, gathering, sharing, celebrating, the colors and tones, the notions of eating, of enjoying, and more…
(Along with the behind the scenes of directing my family and friends to take part in small movements, to hold, to breathe, to lift just an inch, and over just a smidge… to all the subtleties that lead to the grand finale moment of: “ACTION!”
… And then to rest, then to gather and then to clean,
All the way up to the savory moments of *eventually* digging in beyond our eyes,
And the sweet, sweet encore of “mmm” and “yummm”… and if I’m lucky, “wowww”.
…To me, it’s like choreographing a dance or a play, holding my breath in anticipation for the feedback so I can improve for the next showing.)
… Which is simply, only one of my perspectives, let alone other’s perceptions and attention to details, given everything in their path and in their world…
… How each person responds is so uniquely their own, yet so relatable to many.
Yet the irony is that, so often, people can feel alone..?
But, we all have something to share, some different upbringing and personal story,
And dare I say:
We all have something to bring to the table…
On that note,
I wonder what details we will notice today, and what it will inspire tomorrow.

Blackened Salmon Tacos with Pineapple Salsa
Pineapple Salsa:

3 cups pineapple, finely diced

1 cup red onion, finely diced

1/2 cup Cilantro / microgreens

2 cloves Garlic, finely minced

3 small Jalapeños, thinly sliced

2 Tbs lime juice
-
1 tsp chili powder
-
1/2 tsp sea
-
Add all ingredients to a large mixing bowl then stir until combined.

Taste test and adjust to preference.

Set aside until ready to use.
Blackened Salmon:

1 lb salmon (2 portions)

2 tbs Blackened seasoning
-
1/2 Tbs avocado oil for seasoning
-
1 TBs Avocado oil for pan

Preheat a large skillet to medium heat.

In the meantime, pat the salmon dry then drizzle with 1/2 Tbs avocado oil and sprinkle in each portion with the seasoning. Rub the seasoning into the pieces then place each portion into the heated pan, skin side down.

Cook until the bottom starts to brown around the edges and lifts (about 3-5 minutes.) Afterwards, flip over the pieces and cook for another 3-5 minutes or to preference, then turn off the heat and allow the salmon to rest for 1 minute before fluffing with a fork.

When ready, warm up tortillas and serve alongside the salmon and pineapple salsa.

(Optional) Pair with guacamole, jalapeños, micro greens, slivered radishes and cotija cheese.
