This Peach Feta Salad is a summer delight. It is jam-packed with flavors thanks to the tang of the pickled onions, brininess from olives, saltiness from feta and prosciutto, and also, a bright sweetness from peaches and ripe cherry tomatoes. It’s an adventure for the tastebuds as well as a textural delight!
Peach Feta Salad:
PREP TIME: 15 MIN
SERVES: 2-4
Ingredients:
- 3 Peaches, cut into wedges
- 1/2 cup feta, crumbled
- 2 oz. Prosciutto (optional)
- 1/2 cup castelvetrano olives, pitted
- 1/2 cup pickled onions (red onions thinly sliced and quick-pickled in sweet vinegar)
- 1/2 cup loosely packed torn herbs (like basil, parsley, mint)
- 1 cup sun gold cherry tomatoes, halved
- 2 Tbs extra virgin olive oil
- salt and pepper
Directions for Peach Feta Salad:
- Add all ingredients to a large mixing bowl. Gently toss to combine.
- Taste test and adjust accordingly. Chill for at least 1 hour (optional). When ready, give another toss, and garnish with more herbs before serving. Enjoy!
