Melon, Berry & Herb Salad with Mozzarella
INGREDIENTS:
- 1 small honeydew melon, scooped with a melon baller
- 1 small cantaloupe, scooped with a melon baller
- 10 oz (about 1.5 cups) blackberries
- 8 oz (about 1 cup) small mozzarella balls
- 3 oz prosciutto (about 4 large pieces), torn into shorter pieces
- 3 Tbs extra virgin olive oil
- 1/2 cup basil leaves and/or microgreens
- 3 Tbs mint leaves
- Salt and pepper to finish/taste
- 1/4 cup balsamic reduction (more or less to preference)
METHOD:
- Layer all on a serving platter or very gently toss everything together (except for balsamic reduction) in a mixing bowl.
- Transfer to a serving platter or individual plates and finish with a few extra drops of olive oil, then pair alongside with balsamic reduction. Enjoy!
