MELON BERRY HERB SALAD WITH MOZZARELLA

This salad is bright and juicy Melon Berry Herb Salad with Mozzarella is herbaceous, creamy and a brought to life with the saltiness of the prosciutto.

Though I’m not as much of a salad fanatic as I’d like to be, this Melon Berry Herb Salad with Mozzarella gives me life! It has an abundance of textures and is well rounded with its contrasting flavors and textures, ensuring there is a little bit of everything! This salad is bright and juicy, herbaceous and creamy, and a brought to life with the saltiness of the prosciutto. All in all, it is a textural and flavorful delight! Melon, Berry & Herb Salad with Mozzarella

INGREDIENTS:

  • 1 small honeydew melon, scooped with a melon baller
  • 1 small cantaloupe, scooped with a melon baller
  • 10 oz (about 1.5 cups) blackberries
  • 8 oz (about 1 cup) small mozzarella balls
  • 3 oz prosciutto (about 4 large pieces), torn into shorter pieces
  • 3 Tbs extra virgin olive oil
  • 1/2 cup basil leaves and/or microgreens
  • 3 Tbs mint leaves
  • Salt and pepper to finish/taste
  • 1/4 cup balsamic reduction (more or less to preference)

METHOD:

  1. Layer all on a serving platter or very gently toss everything together (except for balsamic reduction) in a mixing bowl.
  2. Transfer to a serving platter or individual plates and finish with a few extra drops of olive oil, then pair alongside with balsamic reduction. Enjoy!
