I think everyone has their go-to smoothie, or at least I feel they should! For me, with this Minty Cucumber Apple Smoothie, there is something about the refreshing crispness of the cucumbers, the sweet, fibrous notes of apples, the awakening zing from ginger, and bright citrus kisses from the lemons, along with the creaminess of bananas that really, some way, some how, makes me feel vibrant and whole. That said, I hope you try for yourself!

Minty Cucumber Apple Smoothie
Ingredients:
- 2 honey golden delicious apples (or apples of preference)
- 2 medium cucumbers
- 1 large lemon
- 2 tablespoons fresh ginger
- 1 frozen banana
- 1-2 cups water (depending on preference)
Method:
- Core the apples and place in a high speed blender. Juice the lemon and add remaining ingredients to the blender/
- Blend and process until consistent, loosening with extra water if needed. Divide the smoothie into cups, garnish and enjoy!
Notes:
- I own a Vitamix which has s a “smoothie” setting, however, any high-speed blender will do with the right amount of patience haha!
- Enjoy smoothies as soon as possible for optimal nutrients, however, you can transfer to an airtight jar or container for up to one day.
