Vegan CBD Ganache Truffles ft. Evo Hemp

Fun fact! These CBD Ganache Truffles featuring Evo Hemp are not only vegan, but they are keto as well! They are gently sweet from the small amount of monk fruit in the hemp chocolate. Also, the health benefits of CBD are impressive. To list a few (from their blog post), CBD:

That said, you can feel good AND do good in a delicious way! This recipe is versatile. You can add as much or as little CBD as you’d like. You can also coat the truffles with other garnishes such as coconut flakes, sprinkles, or even cookie crumbles. The options are endless.

Bring a small saucepan to medium-high heat, then add the coconut cream. Heat until it just begins to bubbles around the edges (about 3-5 minutes).

Next, in a large mixing bowl, add the hemp chocolate, then stream pour the cream over the chocolate. Allow the bowl to rest for 6 minutes to warm up the chocolate.

Afterwards, add the CBD crystals, then whisk the contents until all ingredients are melted and silky smooth (about 3 minutes). Then, cover with wrap, and transfer the bowl of ganache to chill in the fridge for at least 3 hours or until settled.

When ready, add the cacao powder into a small bowl, then return the ganache. Scoop and portion the chilled ganache into spheres (about 2 Tbs rounds).

Afterwards, roll the spheres into the cacao powder. Set aside on a tray, then repeat with the remaining pieces.

Finally, share and enjoy!

Ingredients:

Notes:

  • Store in an airtight container and chill in the fridge to help firm up the pieces if needed.
  • The truffles absorb the cacao powder quickly, so a double coating might help in the aesthetics department hah.
