Warm Butter Lobster Rolls (Connecticut Style) ft. J&R Seafood Market

(SERVES ROUGHLY 8)

INGREDIENTS:

  • 2 lbs. cooked lobster meat (preferably claws and knuckles, as other pieces can be tougher)
  • 1 cup salted butter, divided
  • 8 brioche hot dog buns
  • Warm Butter Lobster
  • 1 cup chives, finely diced (optional)
  • 4 Lemons, quartered (for serving)
  • 1 cup salted butter, melted (to serve alongside)

METHOD:

  1. Bring a large skillet to medium heat. Add the 1/2 cup butter and allow it to melt. Toss in the lobster and cook until just warmed. The time will vary depending if the lobster was previously frozen or just cooked. Set aside to prepare the rolls.
  2. Using a separate large skillet, bring to medium heat and add 1-2 tablespoons of butter at a time. Take the brioche rolls and gently open, then lay it down into the melted butter and repeat with however many you can fit into the pan (giving enough space to avoid steaming). When the first side is golden brown, flip and repeat with all.
  3. Afterwards, layer the warm lobster on top of each roll. Garnish with chives (optional) and serve alongside lemon wedges and melted butter. Enjoy!
